どぅーしー【雑炊】

duushii

Pronunciation: [duːʃiː]

Definition

Noun

  1. An Okinawan dish consisting of rice boiled in water (as opposed to steamed), mixed in with pork, kelp and other vegetables, and often prepared in margarine or lard.

Etymology

Cognate with the Japanese dish named ぞうすい【雑炊】 zousui, a rice porridge containing meat or seafood, egg, and vegetables, typically prepared with soy sauce. Historically derived from the term ぞうすい【増水】 zousui, meaning "increased water", in reference to the larger quantity of water needed to prepare the dish. Later written with the Kanji 【雑炊】, literally "sloppy cooking". Possibly also connected to the Chinese word 【粥】 "rice gruel, congee" (cf. Mandarin zhōu; Cantonese juk1; Vietnamese cháo; and Korean 죽 juk or 육 yuk).
