Etymology

Historically recorded in Gonza's works (ca. early 18th century) under the spelling кошу (koshu). Cognate to Nagasaki こしゅー koshuu; Kagoshima and Kumamoto こしゅ koshu; Okinawan くそー kusoo (and its rendaku variants ぐす -gusu and ぐーす -guusu); and standard Japanese こしょう【胡椒】 koshou "pepper". Historically from こせう koseu. Ultimately of Chinese origin. Cognate to Mandarin 【胡椒】 hújiāo; Cantonese 【胡椒】 wu4 ziu1; Min Nan 【胡椒粉】 hô͘-chio-hún; Korean 고추 gochu and 후추 huchu; and Vietnamese hạt tiêu "pepper".
